Epson Salt Goodness

I worked out three days in a row and my muscles are feeling pretty sore. My favorite thing to do is take a bubble bath with a little added epson salt....It works but I didn't know why.
So here is the reason:
Eases stress and relaxes the body
Stress drains the body of magnesium and increases levels of adrenaline. When dissolved in warm water, Epsom salt is absorbed through the skin and replenishes the level of magnesium in the body. This Week's Lunch!

I was reading Women's Health magazine when I came across an article about making a large quinoa salad to last you through the week. I am a total cheapO and I try my best to only eat lunch out once a week. Eating lunch out in NYC can cost anywhere from $8-$15 bucks! Not only is it expensive, you're more likely to make rash decisions about what is convenient to eat. So this week, I stole the quinoa salad idea and created my own...super easy and delicioso! I also made a refreshing cranberry, orange and lime virgin cocktail...Although it would be amazing with a little added vodka!
Yummy Quinoa Salad
I would say this makes about 3 large servings, could be made into 4.
- 1 cup cooked quinoa
- 4 handfuls of baby spinach
- 1 1/2 cups of organic corn (canned or frozen)
- 1 1/2 cups of organic black beans (canned)
- 1/4 cup of sun dried tomatoes
- 1/4 cup of chopped red onion
- 1 avocado
- feta cheese (about 2oz.)
- you could add a boiled egg, chicken or tuna (which I will do for my lunch)
- add vinaigrette when you eat
Cranberry/Orange/Lime Water
One serving.
- 1/2 medium orange- squeeze into glass first
- 1/4 lim- squeeze into glass and leave at bottom
- 5 or 6 ice cubes
- splash of cranberry juice
- fill the rest of the glass with water

This is a great article that puts things into perspective to those of you who are confused about what it means to be gluten free. I think people are making the gluten free lifestyle into some sort of "diet"...which for those of us who are actually intolerant can be pretty annoying. Just because you are eating gluten free cookies and bread doesn't mean you're going to lose weight and be "healthier." Really, read this article.
